What is an izakaya?
The origin of an izakaya goes back to the Edo Period. It is said that an izakaya started when a sakaya (a bottle shop) which used to sell sake by measure began to offer alcohol on the spot and gradually started to provide nibbles as well. Drinking at a sakaya was called “Izake” derived from “Itsudukete nomu (staying over and drinking),” which developed into the current izakaya.
Izakayas have their roots in this heritage, and we can still see this influence on the current izakayas as a place for social interaction where neighbours can easily get together. So an izakaya in its essence is not a formal place but a social place where everyone can visit on a whim.
The Izakaya HACHIBEH was created to embody such a typical Japanese izakaya for everybody to enjoy. All the chefs at HACHIBEH are Japanese with a lot of experienced who create dishes at a reasonable price without sacrificing the true Japanese taste.
There are a number of other bars or restaurants which call themselves Japanese izakayas within the city of Melbourne, but we can say with confidence that it is only HACHIBEH that is devoted to offering the ultimate example of “classic Japan.”
